CHEESE BLINTZES WITH CHERRY SAUCE

🥞🥞Pancake day is soon upon us and I felt duty-bound to include a pancake recipe on the blog. Blintzes are basically Jewish  crepes  filled with cheese and served dusted with icing sugar (although fillings may vary from sweet to savoury). They are delicious and quite filling – a great brunch or dessert option. Note that you only cook them on one side and you fill them cooked side  in. pancakes comes from pretty everywhere  The Blintz in particular is thought to have originated in Central Europe, around Poland, Hungary and Slovakia. Red Tomato and Green Parsley Soup

Soup is a great fall and winter food. Healthy soup recipes are great for lunch and dinner, and allow you to cut calories without cutting nutrients and vitamins. This  Red Tomato and Green Parsley Soup recipe is even great during cooler summer days when tomatoes and parsley are at their height of freshness. Canned whole tomatoes and parsley are the star ingredients of this soup.Fresh parsley will give you the brightest flavor and aroma, but no worries if you don’t have any on hand. Did you know that the rule of thumb for substituting herbs is to use ⅓ as many dried herbs as you would fresh, since dried herbs tend to be more concentrated? If you’re wondering about that splash of balsamic vinegar, it won’t change that classic tomato soup flavor you know and love, but it will add subtle depth to the flavor. 

Kids even love this soup, especially when it is paired with grilled cheese sandwiches.

Serves 4:

Total Time: 45 Minutes

Ingredients:


  • 1 Tbsp butter.
  • 1 Tbsp olive oil.
  • 1 medium onion, small dice.
  • 1 tsp salt.
  • 1 pinch chili flakes.
  • 1 pinch oregano.
  • 2 cloves garlic, minced.
  • 4 large Tomatoes/ 1 can plum tomatoes.
  • 2 cups chicken or vegetable stock.
  • ¼ tsp black pepper.
  • ½ tsp balsamic vinegar.
  • ½ cup heavy cream.
  • ¼ cup Parsley, chopped.

Method :


  1. In a medium saucepan over medium-low heat, combine butter and oil. Once butter has melted, add onions, season with salt, and cook until onions have fully softened.
  2. Add chili flakes and garlic and cook another 5 minutes.
  3. Increase heat to medium, add tomatoes with their juices and cook about 10 minutes, crushing tomatoes with the back of the spoon.
  4. Add the vegetable stock (for extra taste)black pepper, and balsamic vinegar, and continue to cook until tomatoes completely fall apart.
  5. Remove from heat and use an immersion blender / food processor  any blender to puree .
  6. Return to low heat and slowly stir in the heavy cream. Adjust seasoning (oregano) as needed.
  7. Stir in and garnish with chopped parsley.
  8. Serve with grilled cheese sandwich bread.For stringy cheese grilled sandwich : TOMATO SOUP & GRILLED CHEESE SANDWICH

For roasted tomato soup:

                 🍅Preheat oven to 400°

                🍅  Slice tomatoes in half; place on foil-lined cookie sheet. Drizzle 1 tablespoon of oil over tomatoes. Slightly fold the edges of the foil in toward the tomatoes to capture any juice. Roast tomatoes 20 minutes. And allow 15 minutes to cool before you peel.
